French crêpes recipe with coconut milk

French crêpes are a popular breakfast food in France. They can be served plain or with fruit, jam, or chocolate sauce. Over the years I've perfected a simple and delicious crêpe recipe that can be made with either coconut milk, almond milk, or any type of milk.

I'm now on a dairy-free diet so I often make my crêpes with coconut milk, which gives them a lovely light and fluffy texture. If you've never tried making crêpes with coconut milk before, I highly recommend my 5-minute 5-ingredient healthy French crêpes recipe with coconut milk and Truvia monk fruit sweetener.

My recipe for one person serving.

Ingredients:

1 egg

3/4 cup of milk

1 tbsp sugar or sweetener

1 pinch salt 

1/2 cup flour

1 1/2 tbsp butter 

a dash of cinnamon or nutmeg (optional)

For this recipe, I used Truvia monk fruit sweeteners that I received for free in exchange for my honest review.

I have been using Truvia granulated all-purpose monk fruit sweetener for baking and sweetening my morning coffee. It also comes in packets with cute notes for on-the-go sweetness. If you are looking for a natural, zero-calorie sweetener, I would recommend Truvia monk fruit sweetener.

Erythritol is a naturally occurring sugar alcohol that is found in some fruits and vegetables. It is about 70% as sweet as table sugar and has a lower glycemic index, which means it does not cause spikes in blood sugar levels.

Monk fruit is a small, round fruit that grows in Southeast Asia. It has been used for centuries in Traditional Chinese Medicine to treat digestive issues and sore throats. The extract of the fruit is 200 times sweeter than sugar, making it a popular natural sweetener.

Truvia's new sweetener uses erythritol which is made from the extract of monk fruit to create a product that is zero calories, zero net carbs, and does not affect blood sugar levels.

Instructions:

1. In a blender or food processor, combine the egg, coconut milk, sugar or sweetener, salt, flour, and butter. Blend until the mixture is smooth.

2. Heat a frying pan over medium heat.

3. Pour a small amount of batter into the frying pan and tilt the pan so that the batter covers the entire bottom surface. Cook for one minute or until the crêpe is golden brown. Adjust stove heat and cooking time as necessary.

4. Remove from heat and serve with your desired toppings: banana, Nutella, cinnamon sugar, etc. I like mine as is with a cup of coffee.
